Ingredients
- 2 cups flour
- ¾ cup cocoa powder
- 1½ teaspoons baking powder
- 1½ teaspoons baking soda
- ½ teaspoon salt
- 1¾ cups sugar
- 2 large eggs
- 1 cup buttermilk (or 1 cup milk + 1 teaspoon vinegar)
- ½ cup vegetable oil
- 2 teaspoons vanilla extract
- 1 cup hot water or coffee
- 1 cup peanut butter
- ½ cup butter, at room temperature
- 2 cups powdered sugar
- ¼ cup cream or milk
- 1 teaspoon vanilla extract
- 150g milk or dark chocolate, chopped
- ½ cup cream (for ganache)
Instructions
- Preheat oven to 170°C (340°F). Grease and line two cake pans with parchment paper.
- In a large bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.
- In another bowl, beat sugar, eggs, buttermilk, oil, and vanilla until smooth.
- Gradually mix the dry ingredients into the wet mixture. Stir in the hot water or coffee until the batter is thin and smooth.
- Divide the batter evenly between the prepared pans and bake for 30–35 minutes, or until a toothpick inserted comes out clean.
- Allow cakes to cool completely before frosting.
- To make the peanut butter cream, beat peanut butter and butter together until creamy. Gradually add powdered sugar, then mix in cream and vanilla. Beat until fluffy and smooth.
- To make ganache, heat cream until simmering and pour over chopped chocolate. Let sit for 1–2 minutes, then stir until smooth and glossy. Let cool slightly.
- To assemble, place one cake layer on a plate and spread a thick layer of peanut butter cream on top.
- Add the second cake layer and frost the top and sides with the remaining peanut butter cream.
- Pour the cooled ganache over the top, allowing it to drip down the sides naturally. Decorate as desired.
Notes
- Add chocolate chips or chunks to the batter for extra richness.
- Use sunflower seed butter for a nut-free version.
- Include crushed peanuts between layers for texture.
- Chill the cake before adding ganache for clean drips.
- Top with peanut butter cups or chopped nuts for extra flair.
