Description

A decadent and indulgent dessert, Chocolate Peanut Butter Cake features rich, moist chocolate layers, a fluffy peanut butter cream filling, and a glossy chocolate ganache topping. Perfect for special occasions or whenever you crave a chocolate-peanut butter fix.


Ingredients

  • 2 cups flour
  • ¾ cup cocoa powder
  • 1½ teaspoons baking powder
  • 1½ teaspoons baking soda
  • ½ teaspoon salt
  • 1¾ cups sugar
  • 2 large eggs
  • 1 cup buttermilk (or 1 cup milk + 1 teaspoon vinegar)
  • ½ cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup hot water or coffee
  • 1 cup peanut butter
  • ½ cup butter, at room temperature
  • 2 cups powdered sugar
  • ¼ cup cream or milk
  • 1 teaspoon vanilla extract
  • 150g milk or dark chocolate, chopped
  • ½ cup cream (for ganache)

Instructions

  1. Preheat oven to 170°C (340°F). Grease and line two cake pans with parchment paper.
  2. In a large bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, beat sugar, eggs, buttermilk, oil, and vanilla until smooth.
  4. Gradually mix the dry ingredients into the wet mixture. Stir in the hot water or coffee until the batter is thin and smooth.
  5. Divide the batter evenly between the prepared pans and bake for 30–35 minutes, or until a toothpick inserted comes out clean.
  6. Allow cakes to cool completely before frosting.
  7. To make the peanut butter cream, beat peanut butter and butter together until creamy. Gradually add powdered sugar, then mix in cream and vanilla. Beat until fluffy and smooth.
  8. To make ganache, heat cream until simmering and pour over chopped chocolate. Let sit for 1–2 minutes, then stir until smooth and glossy. Let cool slightly.
  9. To assemble, place one cake layer on a plate and spread a thick layer of peanut butter cream on top.
  10. Add the second cake layer and frost the top and sides with the remaining peanut butter cream.
  11. Pour the cooled ganache over the top, allowing it to drip down the sides naturally. Decorate as desired.

  • Use sunflower seed butter for a nut-free version.
  • Include crushed peanuts between layers for texture.
