Description

Crispy on the outside and soft and gooey on the inside, these Chocolate Lava Cookies feature a rich cocoa cookie dough filled with a smooth vanilla-white chocolate cream center. Perfect for chocolate lovers, this indulgent treat combines multiple textures and flavors in every bite.


Ingredients

  • 1 cup flour
  • ½ cup unsweetened cocoa powder
  • ½ tablespoon baking powder
  • ¼ teaspoon salt
  • ½ cup unsalted butter, softened
  • ½ cup granulated sugar
  • ½ cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 100g dark chocolate, melted and slightly cooled
  • 1 cup milk
  • 2 tablespoons cornstarch
  • 2 tablespoons granulated sugar (for filling)
  • 1 teaspoon vanilla extract (for filling)
  • 2 tablespoons butter (for filling)
  • 60g white chocolate (optional, for filling)
  • Bitter chocolate chunks or shavings (for topping)

Instructions

  1. In a saucepan, whisk together milk, sugar, and cornstarch. Cook over medium heat, stirring constantly until thickened.
  2. Remove from heat and stir in vanilla, butter, and white chocolate. Mix until smooth. Set aside to cool completely.
  3. In a bowl, combine flour, cocoa powder, baking powder, and salt.
  4. In a separate bowl, beat butter, granulated sugar, and brown sugar until light and fluffy.
  5. Add egg and vanilla extract. Mix well, then stir in melted dark chocolate.
  6. Gradually add dry ingredients to the wet mixture to form a soft dough. Chill for 30 minutes.
  7. Preheat oven to 180°C (350°F). Line a baking sheet with parchment paper.
  8. Roll chilled dough into walnut-sized balls. Place on baking sheet and press centers to create a well.
  9. Bake for 10–12 minutes, until edges are set and centers are soft.
  10. Immediately after baking, press centers again gently to deepen the well.
  11. Once cookies are cool, spoon the cream filling into each center.
  12. Top with chocolate shavings or chunks. Let rest for 10 minutes before serving.
