Ingredients

  • 2 cups chocolate sandwich cookie crumbs
  • 6 tablespoons unsalted butter, melted
  • 1 tablespoon granulated sugar
  • 3½ cups fresh strawberries, hulled and completely dried
  • 10 ounces semi-sweet chocolate chips or finely chopped chocolate
  • 1 cup heavy whipping cream
  • 2 tablespoons unsalted butter
  • 1 teaspoon vanilla extract
  • Optional toppings: white chocolate drizzle, chocolate curls or shavings, fresh strawberries, whipped cream

Instructions

  1. In a mixing bowl, combine cookie crumbs, melted butter, and sugar. Stir until evenly moistened.
  2. Press the mixture into a 9-inch pie dish. Chill for 30 minutes or bake at 350°F (175°C) for 8–10 minutes. Let cool completely.
  3. Pat strawberries thoroughly dry and arrange them cut-side down in a tight layer over the crust.
  4. In a saucepan, heat cream over medium heat until steaming. Pour over chocolate in a heatproof bowl and let sit for 2 minutes.
  5. Stir until smooth, then add butter and vanilla. Stir until fully incorporated and slightly thickened.
  6. Pour ganache over strawberries, ensuring even coverage. Tap the dish gently to release air bubbles.
  7. Refrigerate for at least 4 hours until fully set.
  8. Slice using a warm, clean knife. Top with optional decorations if desired.
