Ingredients
- 1 cup unsalted butter, softened
- 3/4 cup white sugar
- 1 1/4 cups packed light brown sugar
- 2 large eggs, cold
- 2 1/2 teaspoons vanilla extract
- 3 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon kosher salt
- 1 1/2 cups semisweet chocolate chips
- 3 quarts ice cream (flavor of choice)
- Assorted sprinkles, mini chocolate chips, or chopped nuts (for rolling)
Instructions
- Preheat oven to 375°F (190°C) and line two baking sheets with parchment paper.
- Cream together the butter, white sugar, and brown sugar in a stand mixer until light and fluffy (about 2 minutes).
- Add cold eggs one at a time, mixing after each addition. Stir in vanilla extract.
- Add flour, baking soda, baking powder, and salt. Mix until just combined. Fold in chocolate chips.
- Scoop 2-tablespoon portions of dough onto baking sheets, spacing 2 inches apart.
- Bake for 9–12 minutes, rotating sheets halfway through, until edges are golden and centers are just set.
- Cool cookies on baking sheets for 5 minutes, then transfer to a wire rack to cool completely.
- Once cooled, turn half the cookies upside down. Add a scoop of softened ice cream to each, then top with another cookie and gently press.
- Roll the edges in sprinkles, mini chocolate chips, or chopped nuts.
- Wrap each sandwich tightly in plastic wrap and freeze for at least 4 hours, or until firm.
