These chocolate almond no-bake truffles are rich, creamy treats made with wholesome ingredients like dates, almond butter, and coconut flour, then coated in dark chocolate. A naturally sweet, nourishing snack or dessert.
Ingredients
- 6 large Medjool dates, pitted
- 3/4 cup all natural almond butter
- 1/2 cup coconut flour
- 1 to 2 tablespoons coconut milk or water, as needed
- 12 whole raw almonds
- 1 cup dark chocolate, melted
- 1 tablespoon shredded unsweetened coconut (optional, for garnish)
Instructions
- Boil water in a medium saucepan, remove from heat, and soak the dates for 10 minutes. Drain well.
- In a food processor, combine soaked dates, almond butter, and coconut flour. Pulse until smooth. Add coconut milk or water as needed for a soft, moldable dough.
- Scoop 1 tablespoon of mixture, press 1 almond into the center, and roll into a ball. Repeat with remaining mixture.
- Place truffles on a parchment-lined baking sheet.
- Melt the dark chocolate in 30-second microwave intervals (or use a double boiler), stirring between each until smooth.
- Dip each truffle in melted chocolate, let excess drip off, and return to the baking sheet.
- Sprinkle with shredded coconut if desired.
- Refrigerate for 20 minutes until the chocolate is set.
Notes
- Soak dates for a smoother texture—especially if they are firm or dry.
- Mixture too dry? Add coconut milk or water a little at a time.
- Swap almond butter for cashew, peanut, or sunflower seed butter.
- Skip the chocolate coating and roll in cocoa or coconut instead.
