Description
A fast, flavorful stir-fry featuring tender chicken, mushrooms, and crisp vegetables in a savory soy-oyster sauce. Ready in under 30 minutes, perfect for weeknight dinners.
Ingredients
- 2 tablespoons vegetable oil
- 1 pound boneless, skinless chicken breasts, sliced into thin strips
- 1 cup mushrooms (shiitake or button), sliced
- 1 medium bell pepper (any color), sliced
- 1 cup broccoli florets
- 3 garlic cloves, minced
- 1 tablespoon fresh ginger, minced
- 1/4 cup soy sauce
- 2 tablespoons oyster sauce
- 1 tablespoon cornstarch
- 1/4 cup chicken broth
- 1 teaspoon sesame oil
- 1/4 teaspoon salt, or to taste
- 1/4 teaspoon black pepper, or to taste
- Cooked rice or noodles, for serving
Instructions
- Heat the vegetable oil in a large skillet or wok over medium-high heat.
- Add the chicken strips and cook for 5–7 minutes, stirring occasionally, until browned and cooked through. Remove from skillet and set aside.
- In the same skillet, stir-fry the mushrooms, bell pepper, and broccoli for 3–4 minutes until tender-crisp.
- Add the minced garlic and ginger; stir for 1 minute until fragrant.
- In a small bowl, whisk together soy sauce, oyster sauce, cornstarch, chicken broth, and sesame oil until smooth.
- Return the chicken to the skillet and pour the sauce over everything.
- Cook for 2–3 minutes, stirring frequently, until the sauce thickens and evenly coats the chicken and vegetables.
- Season with salt and black pepper to taste. Serve hot over rice or noodles.
Notes
- Use chicken thighs for a richer flavor if desired.
- Add red pepper flakes or fresh chilies for heat.
- Swap in other vegetables like snap peas, carrots, or baby corn.
- For a vegetarian version, replace chicken with tofu and use mushroom-based oyster sauce.
