Description

A hearty, flavorful Chicken Tortilla Soup made with tender chicken, black beans, corn, and a bold, spiced tomato broth. Topped with crunchy tortilla strips, it’s comforting, satisfying, and perfect for weeknight meals.


Ingredients

  • 1 lb (450 g) boneless, skinless chicken breasts or thighs
  • 1 tbsp olive oil
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 medium red bell pepper, diced
  • 1 medium green bell pepper, diced
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1/2 tsp smoked paprika
  • 1/2 tsp dried oregano
  • 1/2 tsp ground coriander
  • 1/4 tsp black pepper
  • 1 tsp salt (or to taste)
  • 1 can (14.5 oz / 410 g) diced tomatoes
  • 1 can (10 oz / 285 g) tomatoes with green chilies
  • 1 can (15 oz / 425 g) black beans, drained and rinsed
  • 1 can (15 oz / 425 g) corn kernels, drained
  • 6 cups (1.4 liters) chicken broth
  • 1 tbsp fresh lime juice
  • 1/4 cup fresh cilantro, chopped
  • 2 cups tortilla strips or crushed tortilla chips (for serving)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped onion and sauté for 3–4 minutes until softened. Add garlic and cook for 30 seconds until fragrant.
  2. Add chicken breasts or thighs and sprinkle with cumin, chili powder, smoked paprika, oregano, coriander, salt, and black pepper. Cook for 3–4 minutes, turning to coat.
  3. Add diced tomatoes, tomatoes with green chilies, black beans, corn, and chicken broth. Stir well and bring to a gentle boil.
  4. Reduce heat to low, cover, and simmer for 20–25 minutes or until chicken is cooked through.
  5. Remove chicken, shred with two forks, and return to the pot.
  6. Stir in lime juice and chopped cilantro. Simmer for 5 more minutes. Adjust seasoning if needed.
  7. Serve hot, topped with tortilla strips or crushed tortilla chips.

  • Use rotisserie chicken to save time.
  • Add chili flakes or cayenne for extra heat.
  • Stir in cream or coconut milk for a creamier version.
  • Add zucchini or carrots for more veggies.
