Description

A comforting and flavorful dish featuring tender chicken in a garlic-lemon butter sauce served over creamy garlic Parmesan rice. Elegant enough for guests, yet easy enough for a cozy weeknight dinner.


Ingredients

  • For the chicken scampi:
  • 1 pound boneless, skinless chicken breasts, sliced into thin strips
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1/4 cup fresh lemon juice
  • 1/4 cup white cooking wine or additional chicken broth
  • 2 tablespoons unsalted butter
  • 2 tablespoons chopped fresh parsley
  • For the garlic Parmesan rice:
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 2 cloves garlic, minced
  • 1/4 cup finely grated Parmesan cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon chopped fresh parsley for garnish

Instructions

  1. Season sliced chicken with salt and black pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook for 4–5 minutes until lightly golden and cooked through. Remove and set aside.
  3. Lower heat to medium, add garlic, and sauté for 30 seconds.
  4. Add chicken broth, lemon juice, and wine or extra broth. Simmer for 3–4 minutes to reduce slightly.
  5. Stir in butter until melted, return chicken to skillet, toss to coat, and simmer for 2 minutes. Garnish with parsley and remove from heat.
  6. Rinse rice under cold water. In a saucepan, combine rice, chicken broth, garlic, salt, and pepper. Bring to a boil, then reduce heat, cover, and simmer for 15–18 minutes.
  7. Remove rice from heat, stir in Parmesan, and fluff with a fork. Garnish with parsley.
  8. Serve the chicken scampi hot over a bed of garlic Parmesan rice.

Notes

  • Add sautéed mushrooms, spinach, or bell peppers for more vegetables.
  • Use brown rice for a whole grain option (increase cook time).
  • For extra creaminess, stir in a few tablespoons of cream at the end.
  • Replace wine with broth if preferred.
  • Top with extra Parmesan for added richness.
