Description

Ingredients

  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1 teaspoon Italian seasoning
  • ½ teaspoon crushed red pepper flakes (optional)
  • 1 teaspoon salt
  • ¼ teaspoon black pepper
  • 5 cloves garlic, minced
  • Juice of 1 lemon
  • Zest of ½ lemon
  • 1½ cups long-grain white rice
  • 3 cups chicken broth
  • ½ cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 tablespoon chopped parsley (for garnish)
  • Lemon wedges, for serving

Instructions

  1. Heat olive oil and butter in a large skillet over medium-high heat. Season chicken with Italian seasoning, salt, pepper, and red pepper flakes. Cook chicken until golden and cooked through, 6–8 minutes. Remove and set aside.
  2. Reduce heat to medium. Add garlic and sauté for 30 seconds until fragrant. Stir in lemon juice and zest to deglaze the pan.
  3. Add rice and stir to coat with garlic-lemon mixture. Toast for 1–2 minutes.
  4. Pour in chicken broth. Bring to a boil, then reduce heat to low. Cover and simmer for 18–20 minutes until rice is tender and liquid is absorbed.
  5. Stir in heavy cream and Parmesan cheese until creamy and smooth.
  6. Return chicken to skillet and stir gently to combine. Garnish with parsley and serve with lemon wedges.
