This cozy Chicken and Dumpling Casserole transforms classic chicken and dumplings into an easy, oven-baked dish with creamy chicken, soft dumplings, and rich gravy—perfect for a comforting family meal.


Ingredients

  • 3 cups cooked shredded chicken
  • 4 tablespoons unsalted butter
  • 1 small onion, finely diced (optional)
  • 2 cups chicken broth
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup frozen peas and carrots (optional)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried thyme or poultry seasoning
  • Salt and pepper to taste
  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 2 cups warm chicken broth (for gravy)
  • 1 packet chicken gravy mix or 2 teaspoons chicken bouillon powder (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. In a skillet, melt butter and sauté onion until soft (if using).
  3. Stir in shredded chicken, cream of chicken soup, 2 cups broth, vegetables, and seasonings. Mix well and pour into baking dish.
  4. In a bowl, combine flour, baking powder, and salt. Add milk and mix until smooth. Spoon batter evenly over chicken mixture without stirring.
  5. In a separate bowl, whisk warm broth with gravy mix or bouillon until dissolved. Slowly pour over the batter layer — do not stir.
  6. Bake uncovered for 45–55 minutes until golden brown and bubbly. The dumpling layer should be set and fluffy.
  7. Let rest 5–10 minutes before serving. Garnish with chopped parsley or a dash of paprika, if desired.

Notes

  • Do not stir after layering to allow dumplings to form properly.
  • Use rotisserie chicken for convenience.
  • Add cheese or extra vegetables to customize the filling.
  • For richer flavor, stir a splash of cream into the soup mixture.
