Ingredients
- 3 cups cooked shredded chicken
- 4 tablespoons unsalted butter
- 1 small onion, finely diced (optional)
- 2 cups chicken broth
- 1 can (10.5 oz) cream of chicken soup
- 1 cup frozen peas and carrots (optional)
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon dried thyme or poultry seasoning
- Salt and pepper to taste
- 1 cup all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 2 cups warm chicken broth (for gravy)
- 1 packet chicken gravy mix or 2 teaspoons chicken bouillon powder (optional)
Instructions
- Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
- In a skillet, melt butter and sauté onion until soft (if using).
- Stir in shredded chicken, cream of chicken soup, 2 cups broth, vegetables, and seasonings. Mix well and pour into baking dish.
- In a bowl, combine flour, baking powder, and salt. Add milk and mix until smooth. Spoon batter evenly over chicken mixture without stirring.
- In a separate bowl, whisk warm broth with gravy mix or bouillon until dissolved. Slowly pour over the batter layer — do not stir.
- Bake uncovered for 45–55 minutes until golden brown and bubbly. The dumpling layer should be set and fluffy.
- Let rest 5–10 minutes before serving. Garnish with chopped parsley or a dash of paprika, if desired.

- Do not stir after layering to allow dumplings to form properly.
- Use rotisserie chicken for convenience.
