Ingredients
- 1 pound (450 g) ground chicken
- 1 1/2 cups (150 g) finely chopped fresh broccoli florets
- 1/2 cup (50 g) finely chopped onion
- 2 cloves garlic, minced
- 1/2 cup (50 g) breadcrumbs
- 1/3 cup (30 g) grated mozzarella cheese
- 1 large egg
- 2 tablespoons chopped fresh parsley
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1/2 teaspoon dried oregano
- 2 tablespoons olive oil (for frying)
Instructions
- Finely chop the broccoli into very small pieces for even texture.
- In a large bowl, combine ground chicken, chopped broccoli, onion, garlic, breadcrumbs, mozzarella, egg, parsley, salt, black pepper, paprika, and oregano.
- Mix gently until just combined, avoiding overmixing.
- Divide the mixture into 6–8 equal portions and shape into patties about 1/2 inch thick.
- Heat olive oil in a large skillet over medium heat.
- Cook patties for 5–6 minutes per side until golden brown and cooked through, reaching an internal temperature of 165°F (74°C).
- Remove from skillet and let rest for a few minutes before serving.
Notes
- Do not overmix the mixture to keep patties tender.
- Ensure broccoli is finely chopped to prevent patties from falling apart.
- For baking, cook at 400°F (200°C) for 18–20 minutes, flipping halfway.
- Patties can be frozen for up to 3 months after cooling.
- Let patties rest briefly after cooking to retain juices.
