Description

Cherry Mash Truffles are bite-sized, no-bake treats made with chopped maraschino cherries, sweetened coconut, and a creamy center coated in smooth milk chocolate. They’re nostalgic, festive, and perfect for gifting or holiday platters.


Ingredients

  • 1 cup maraschino cherries, well drained and finely chopped
  • 1/2 cup (113 g) unsalted butter, softened
  • 2 1/2 cups (300 g) powdered sugar
  • 2 cups (160 g) sweetened shredded coconut
  • 1 teaspoon vanilla extract
  • 3 cups (510 g) milk chocolate chips
  • 1 tablespoon vegetable oil

Instructions

  1. Pat maraschino cherries dry with paper towels, then finely chop and set aside.
  2. In a large bowl, cream the softened butter until smooth.
  3. Gradually add powdered sugar, mixing until a thick, smooth consistency forms.
  4. Stir in shredded coconut, vanilla extract, and chopped cherries until well combined.
  5. Cover and refrigerate the mixture for 30 minutes to firm up.
  6. Roll the mixture into 1-inch balls and place on a parchment-lined baking sheet.
  7. Freeze the rolled balls for 20 minutes.
  8. Melt chocolate chips with vegetable oil using a double boiler or microwave in short bursts, stirring until smooth.
  9. Dip each frozen truffle into the melted chocolate, letting excess drip off.
  10. Place coated truffles back on parchment and allow to set at room temperature or in the fridge.

Notes

  • Use dark or semi-sweet chocolate for a less sweet option.
  • Add 1/2 teaspoon cherry extract for more cherry flavor.
