Description

Cheesy spinach rice and orzo is a creamy, comforting dish made with tender rice, delicate orzo, melty cheese, and fresh spinach. Quick and easy, it works as a meatless main or a hearty side.


Ingredients

  • 2 tablespoons unsalted butter
  • 3/4 cup long-grain white rice
  • 1/2 cup orzo pasta
  • 2 3/4 cups vegetable broth
  • 2/3 cup whole milk
  • 1/2 cup finely diced onion
  • 1/2 teaspoon dried parsley
  • 1 cup shredded sharp cheddar cheese
  • 1 cup fresh spinach, finely chopped
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Melt the butter in a large skillet over medium heat.
  2. Add the rice and orzo, stirring frequently, and cook for 2–3 minutes until lightly toasted.
  3. Pour in the vegetable broth and milk, then add the diced onion and dried parsley. Stir to combine.
  4. Bring the mixture to a gentle boil, then reduce the heat to low and cover.
  5. Simmer for about 15 minutes, or until the rice and orzo are tender and most of the liquid is absorbed.
  6. Remove from heat and stir in the shredded cheese until melted.
  7. Add the chopped spinach, salt, and black pepper, mixing until the spinach wilts.
  8. Let rest for 2 minutes before serving.
