Ingredients
- 2 tablespoons unsalted butter
- 3/4 cup long-grain white rice
- 1/2 cup orzo pasta
- 2 3/4 cups vegetable broth
- 2/3 cup whole milk
- 1/2 cup finely diced onion
- 1/2 teaspoon dried parsley
- 1 cup shredded sharp cheddar cheese
- 1 cup fresh spinach, finely chopped
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Melt the butter in a large skillet over medium heat.
- Add the rice and orzo, stirring frequently, and cook for 2–3 minutes until lightly toasted.
- Pour in the vegetable broth and milk, then add the diced onion and dried parsley. Stir to combine.
- Bring the mixture to a gentle boil, then reduce the heat to low and cover.
- Simmer for about 15 minutes, or until the rice and orzo are tender and most of the liquid is absorbed.
- Remove from heat and stir in the shredded cheese until melted.
- Add the chopped spinach, salt, and black pepper, mixing until the spinach wilts.
- Let rest for 2 minutes before serving.
Notes
- Add sautéed mushrooms or bell peppers for extra vegetables.
- Use mozzarella or a cheese blend for a milder flavor.
- Stir in cooked lentils or chickpeas for added protein.
- Replace spinach with kale or Swiss chard if preferred.
