Description

Cheesy Pepperoni Pizza Roll-Ups are a quick, low-carb take on classic pizza, featuring melted mozzarella, zesty pepperoni, and savory pizza sauce rolled in a soft tortilla. Perfect for snacks, meals, or party appetizers.


Ingredients

  • 4 cups shredded mozzarella cheese
  • 8 low-carb tortillas
  • 1/2 cup pizza sauce
  • 48 slices pepperoni

Instructions

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Lay tortillas flat and spread about 1 tablespoon of pizza sauce on each, leaving a 1/2-inch border.
  3. Sprinkle 1/2 cup shredded mozzarella cheese evenly over each tortilla.
  4. Place 6 slices of pepperoni in a single layer over the cheese.
  5. Roll each tortilla tightly and place seam-side down on the baking sheet.
  6. Bake for 12–15 minutes, or until cheese is melted and tortillas are golden brown.
  7. Let cool for a few minutes, then slice in half and serve warm.
