Ingredients
- 3 medium zucchinis (about 1 1/2 pounds total)
- 2 tablespoons olive oil
- 4 garlic cloves, finely minced
- 1/2 teaspoon sea salt
- 1/4 teaspoon freshly ground black pepper
- 1/4 teaspoon crushed red pepper flakes (optional)
- 1 cup shredded part-skim mozzarella cheese (about 4 ounces)
- 1/2 cup freshly grated Parmesan cheese (about 2 ounces)
- 1 teaspoon Italian seasoning
- 1 tablespoon fresh parsley, finely chopped
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper. Wash, dry, and trim the zucchinis. Slice lengthwise into 1/2 to 3/4 inch thick slabs.
- Arrange zucchini in a single layer. Mix olive oil, garlic, salt, pepper, and red pepper flakes. Brush evenly over both sides of each slice.
- Bake for 15–18 minutes, flipping halfway through, until tender and lightly golden.
- Combine mozzarella, Parmesan, and Italian seasoning. Remove zucchini from oven and sprinkle cheese mixture evenly on top.
- Switch oven to broil and cook for 2–3 minutes until cheese is melted, bubbly, and golden brown. Watch carefully to avoid burning.
- Remove from oven, cool slightly, garnish with fresh parsley, and serve warm.
