Description

Thick-cut zucchini slices roasted until tender and topped with a golden blend of melted mozzarella, Parmesan, garlic, and herbs. This low-carb, flavorful dish works perfectly as a hearty side or light main course.


Ingredients

  • 3 medium zucchinis (about 1 1/2 pounds total)
  • 2 tablespoons olive oil
  • 4 garlic cloves, finely minced
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • 1 cup shredded part-skim mozzarella cheese (about 4 ounces)
  • 1/2 cup freshly grated Parmesan cheese (about 2 ounces)
  • 1 teaspoon Italian seasoning
  • 1 tablespoon fresh parsley, finely chopped

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper. Wash, dry, and trim the zucchinis. Slice lengthwise into 1/2 to 3/4 inch thick slabs.
  2. Arrange zucchini in a single layer. Mix olive oil, garlic, salt, pepper, and red pepper flakes. Brush evenly over both sides of each slice.
  3. Bake for 15–18 minutes, flipping halfway through, until tender and lightly golden.
  4. Combine mozzarella, Parmesan, and Italian seasoning. Remove zucchini from oven and sprinkle cheese mixture evenly on top.
  5. Switch oven to broil and cook for 2–3 minutes until cheese is melted, bubbly, and golden brown. Watch carefully to avoid burning.
  6. Remove from oven, cool slightly, garnish with fresh parsley, and serve warm.
