Description

Crispy tortillas filled with tender chicken and melted cheese, perfect for a quick lunch, dinner, or snack.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup finely chopped onions
  • 1/4 cup chopped bell peppers (any color)
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 large flour tortillas
  • 1 tablespoon olive oil or butter for cooking

Instructions

  1. In a medium bowl, combine shredded chicken, cheddar, mozzarella, onions, bell peppers, garlic powder, paprika, salt, and pepper. Mix until well combined.
  2. Heat a non-stick skillet over medium heat and lightly brush with olive oil or butter.
  3. Place one tortilla in the skillet and evenly spread half of the chicken and cheese mixture over it. Top with another tortilla.
  4. Cook for 3-4 minutes on each side or until the tortilla is golden brown and the cheese is melted, pressing gently with a spatula to help the filling stick together.
  5. Remove from skillet and let it rest for 1-2 minutes before cutting into wedges.
  6. Repeat with remaining tortillas and filling. Serve warm with salsa, guacamole, or sour cream.
