This cheesy chicken and rice casserole is a comforting, one-pan meal made with tender chicken, creamy rice, vegetables, and lots of melty cheese. It’s simple, satisfying, and perfect for busy weeknights or cozy family dinners.
Ingredients
- 2 cups cooked chicken breast, diced or shredded
- 1 box (6.9 ounces) chicken-flavored rice mix
- 2 cups water
- 1 can (10.5 ounces) cream of chicken soup
- 1 cup sour cream
- 2 cups shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 1 cup frozen mixed vegetables (peas and carrots)
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon salt
- ½ teaspoon black pepper
Instructions
- Preheat the oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish and set aside.
- In a medium saucepan, heat olive oil over medium heat. Add the rice mix and stir for 1 to 2 minutes until lightly toasted.
- Add the water, bring to a boil, then reduce heat, cover, and simmer according to package directions until rice is cooked.
- In a large bowl, combine the cooked chicken, prepared rice, cream of chicken soup, sour cream, garlic powder, onion powder, salt, and black pepper. Mix well.
- Stir in the frozen vegetables and 1½ cups of the shredded cheese.
- Spread the mixture evenly in the prepared baking dish. Sprinkle remaining cheese on top.
- Bake uncovered for 25 to 30 minutes, until hot and bubbly with melted cheese on top.
- Let rest for 5 minutes before serving.
