Description

This cheesy chicken and rice casserole is a comforting, one-pan meal made with tender chicken, creamy rice, vegetables, and lots of melty cheese. It’s simple, satisfying, and perfect for busy weeknights or cozy family dinners.


Ingredients

  • 2 cups cooked chicken breast, diced or shredded
  • 1 box (6.9 ounces) chicken-flavored rice mix
  • 2 cups water
  • 1 can (10.5 ounces) cream of chicken soup
  • 1 cup sour cream
  • 2 cups shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup frozen mixed vegetables (peas and carrots)
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Instructions

  1. Preheat the oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish and set aside.
  2. In a medium saucepan, heat olive oil over medium heat. Add the rice mix and stir for 1 to 2 minutes until lightly toasted.
  3. Add the water, bring to a boil, then reduce heat, cover, and simmer according to package directions until rice is cooked.
  4. In a large bowl, combine the cooked chicken, prepared rice, cream of chicken soup, sour cream, garlic powder, onion powder, salt, and black pepper. Mix well.
  5. Stir in the frozen vegetables and 1½ cups of the shredded cheese.
  6. Spread the mixture evenly in the prepared baking dish. Sprinkle remaining cheese on top.
  7. Bake uncovered for 25 to 30 minutes, until hot and bubbly with melted cheese on top.
  8. Let rest for 5 minutes before serving.
