Description

This cheesy beef enchilada tortellini bake is a comforting fusion dish combining tender cheese tortellini, seasoned ground beef, enchilada sauce, and melty cheese. It’s hearty, flavorful, and easy to make for family dinners or meal prep.


Ingredients

  • 1 pound ground beef
  • 9 ounces cheese tortellini (fresh or refrigerated)
  • 10 ounces enchilada sauce
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup chopped fresh cilantro
  • 1/2 cup sour cream

Instructions

  1. Preheat oven to 375°F (190°C). Grease a medium baking dish and set aside.
  2. Cook the tortellini in salted boiling water according to package instructions. Drain and set aside.
  3. Heat olive oil in a skillet over medium heat. Add chopped onion and sauté for 3 minutes. Add garlic and cook for 30 seconds.
  4. Add ground beef and cook until browned, breaking it up with a spoon. Drain excess fat.
  5. Season beef with cumin, chili powder, paprika, salt, and pepper. Stir to coat evenly.
  6. Pour in enchilada sauce and simmer for 3–5 minutes.
  7. Add cooked tortellini and stir to combine. Remove from heat and mix in sour cream and half of the cheeses.
  8. Transfer mixture to the baking dish and top with remaining cheddar and mozzarella cheese.
  9. Bake uncovered for 20–25 minutes, until cheese is melted and bubbly.
  10. Garnish with chopped cilantro before serving.

  • Use spicy enchilada sauce or cayenne for added heat.
  • Ground turkey or chicken can replace beef.
  • Add bell peppers or corn for extra veggies.
