Description

A quick and comforting one-skillet meal featuring ground beef, red enchilada sauce, green chiles, sour cream, and melty cheddar cheese. This Cheesy Beef Enchilada Skillet is endlessly versatile and ready in just 20 minutes—perfect for busy nights.


Ingredients

2 lbs lean ground beef

1 onion, diced

1/2 tsp garlic powder

1/2 tsp salt

1 cup red enchilada sauce

4.5 oz diced green chiles (1 small can)

1/2 cup sour cream

1 cup cheddar cheese

Optional: 2.5 oz sliced black olives (1 small can), drained

Optional: 3 green onions, diced


Instructions

  1. Heat a large skillet over medium heat. Add ground beef and diced onion. Cook until beef is browned and onions are translucent. Drain excess grease.
  2. Return skillet to heat. Stir in garlic powder, salt, enchilada sauce, green chiles, and sour cream. Bring to a boil, then reduce heat and simmer for 4–6 minutes until thickened.
  3. Stir in half the cheddar cheese. Sprinkle remaining cheese over the top. Cover skillet with a lid for 2–3 minutes until cheese is melted.
  4. Top with black olives and green onions if desired. Serve immediately in tortillas, over chips, or with rice.
