Ingredients
- 3 medium sweet potatoes (about 1.5 lb / 680 g), peeled and cut into 1-inch cubes
- 2 tablespoons olive oil
- 2 tablespoons pure maple syrup
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/2 teaspoon salt, or to taste
- 1/4 teaspoon black pepper
- 1/2 cup feta cheese, crumbled
- 1/3 cup walnuts, toasted and roughly chopped
- 2 tablespoons fresh parsley, finely chopped (for garnish)
Instructions
- Preheat the oven to 400°F (200°C). Line a large baking sheet with parchment paper.
- In a large mixing bowl, toss the sweet potato cubes with olive oil, maple syrup, cinnamon, nutmeg, salt, and black pepper until evenly coated.
- Spread the sweet potatoes in a single layer on the baking sheet without overcrowding.
- Roast for 25 to 30 minutes, flipping halfway through, until tender and caramelized on the edges.

- Garnish with fresh parsley and serve warm.
Notes
- Add a pinch of ground ginger or allspice for extra warmth.
- Substitute walnuts with pecans or almonds if preferred.

- Drizzle with tahini or honey for additional flavor.
- Can be served warm or at room temperature.
