Description

Ingredients

  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon butter
  • 2 cups caramelized onions
  • 3 cloves garlic, smashed
  • 4 sprigs fresh thyme, leaves removed
  • 1 dried bay leaf
  • 1 tablespoon Worcestershire sauce
  • 1/2 cup Kalamata olives, pitted and halved
  • 1 tablespoon olive brine
  • 1 teaspoon honey
  • 2 large flatbreads
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat oven to 230°C (450°F).
  2. Heat olive oil and butter in a pan over medium-low heat.
  3. Add caramelized onions, garlic, thyme, and bay leaf. Stir well.
  4. Season with salt and pepper, cover, and cook for 10 minutes.
  5. Remove lid and stir in Worcestershire sauce, olive brine, and honey.
  6. Cook uncovered for 20–30 minutes until thick and jam-like.
  7. Lightly toast flatbreads in the oven for 3–5 minutes.
  8. Spread onion mixture over flatbreads and top with olives.
  9. Bake for 10–15 minutes until edges are crisp.
  10. Slice and serve warm.
