Ingredients
- 2 tablespoons extra virgin olive oil
- 1 tablespoon butter
- 2 cups caramelized onions
- 3 cloves garlic, smashed
- 4 sprigs fresh thyme, leaves removed
- 1 dried bay leaf
- 1 tablespoon Worcestershire sauce
- 1/2 cup Kalamata olives, pitted and halved
- 1 tablespoon olive brine
- 1 teaspoon honey
- 2 large flatbreads
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat oven to 230°C (450°F).
- Heat olive oil and butter in a pan over medium-low heat.
- Add caramelized onions, garlic, thyme, and bay leaf. Stir well.
- Season with salt and pepper, cover, and cook for 10 minutes.
- Remove lid and stir in Worcestershire sauce, olive brine, and honey.
- Cook uncovered for 20–30 minutes until thick and jam-like.
- Lightly toast flatbreads in the oven for 3–5 minutes.
- Spread onion mixture over flatbreads and top with olives.
- Bake for 10–15 minutes until edges are crisp.
- Slice and serve warm.

- Swap thyme with rosemary for a different herbal note.
- Top with fresh arugula after baking for freshness.
