Description

This caramelized onion and goat cheese tart is a rich and savory dish with a flaky crust, sweet golden onions, and creamy tangy cheese. It’s simple to prepare yet elegant enough for entertaining or a light meal.


Ingredients

  • 1 sheet puff pastry (about 250 g), thawed
  • 3 large onions (about 600 g), thinly sliced
  • 2 tablespoons olive oil
  • 1 tablespoon unsalted butter
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)
  • 120 g goat cheese, crumbled
  • 1 egg
  • 1 tablespoon milk or cream

Instructions

  1. Preheat the oven to 200°C (400°F) and line a baking sheet with parchment paper.
  2. Heat olive oil and butter in a large pan over medium heat. Add sliced onions and cook, stirring occasionally.
  3. After 10 minutes, add sugar, salt, and pepper. Continue cooking for 20–25 minutes until onions are deeply golden and caramelized. Stir in thyme and remove from heat.
  4. Roll out the puff pastry slightly on a floured surface and transfer to the prepared baking sheet.
  5. Score a 2 cm border around the edges without cutting through.
  6. Spread the caramelized onions evenly inside the border.
  7. Sprinkle crumbled goat cheese over the onions.
  8. Beat the egg with milk or cream and brush the edges of the pastry.
  9. Bake for 20–25 minutes until the pastry is puffed and golden.
  10. Let cool slightly before slicing and serving.

  • Prepare caramelized onions ahead of time and refrigerate for up to 2 days.
  • Ensure onions are not too wet to prevent a soggy crust.
  • Swap goat cheese with feta or cream cheese for variation.
