Description

These no-bake Caramel Crunch Bars feature layers of buttery crackers, a rich caramel-like filling, and a smooth chocolate–butterscotch–peanut butter topping. A quick, crowd-pleasing treat perfect for any occasion.


Ingredients

  • 80 club crackers
  • 1 cup (227 g) unsalted butter
  • 2 cups (200 g) graham cracker crumbs
  • 1 cup (212 g) firmly packed brown sugar
  • 1/2 cup milk
  • 1/3 cup (71 g) granulated sugar
  • 2/3 cup (170 g) creamy peanut butter
  • 1/2 cup (85 g) semisweet chocolate morsels
  • 1 1/2 cup (255 g) butterscotch morsels

Instructions

  1. Line a 9×13-inch baking pan with foil, leaving overhang to lift out later. Arrange a single layer of club crackers over the bottom.
  2. In a large saucepan, melt butter over medium heat. Stir in graham cracker crumbs, brown sugar, milk, and granulated sugar.
  3. Bring to a boil and cook for 5 minutes, stirring constantly.
  4. Spread half of the hot mixture evenly over the cracker layer.
  5. Add another layer of crackers, then spread the remaining caramel mixture. Top with a final layer of crackers.
  6. In a small saucepan or microwave, melt peanut butter, semisweet chocolate morsels, and butterscotch morsels over low heat, stirring until smooth.
  7. Pour and spread evenly over the top cracker layer.
  8. Cover and refrigerate for at least 1 hour. Once chilled, lift the bars out of the pan and cut into squares. Keep refrigerated until serving.

  • Sprinkle flaky sea salt over the topping before chilling for a sweet-salty finish.
