Description

Caramel Banana Pudding Parfaits are layered desserts featuring silky homemade banana pudding, ripe banana slices, crushed vanilla wafers, and rich caramel sauce. Served in jars or cups, they’re an easy yet elegant treat perfect for any occasion.


Ingredients

  • 4 large eggs
  • 1 cup caramel sauce
  • 3 medium bananas, peeled and sliced
  • 2 cups crushed vanilla wafer cookies
  • 1 teaspoon banana extract
  • 3 cups whole milk, divided
  • 1/2 teaspoon salt
  • 1/4 cup cornstarch
  • 3 tablespoons all-purpose flour
  • 1/2 cup sugar
  • Whipped cream for topping

Instructions

  1. In a large bowl, whisk together sugar, flour, cornstarch, and salt.
  2. Separate 3 of the eggs, reserving the whites. Add the remaining whole egg to the 3 yolks, and whisk into the dry mixture.
  3. Stir in 1/2 cup of the milk until smooth.
  4. In a saucepan, heat the remaining 2 1/2 cups milk until warm (not boiling).
  5. Gradually whisk in the egg mixture and cook over medium heat, stirring constantly, until thickened (about 10 minutes).
  6. Remove from heat and stir in banana extract.
  7. Peel and slice the bananas.
  8. In jars or serving dishes, layer crushed cookies, warm pudding, banana slices, and caramel sauce. Repeat layers as needed.
  9. Refrigerate until chilled (1–2 hours) or enjoy warm.
  10. Top with whipped cream just before serving.

  • Best served within 24 hours to keep bananas fresh.
  • Toss banana slices in lemon juice to prevent browning if storing.
