Description

A comforting Italian seafood dish where tender calamari simmer slowly in a rich tomato sauce with peas. Rustic, flavorful, and easy to make, it’s perfect for a weeknight dinner or a special meal.


Ingredients

  • 600 g cleaned calamari, sliced into rings (tentacles kept whole)
  • 3 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 3 garlic cloves, minced
  • 400 g tomato sauce
  • 120 ml seafood stock or water
  • 150 g peas (fresh or frozen)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. Heat olive oil in a wide pan over medium heat.
  2. Add chopped onion and cook for 5–7 minutes until soft and translucent.
  3. Stir in minced garlic and cook for 30 seconds until fragrant.
  4. Add calamari and cook for 2–3 minutes, stirring occasionally.
  5. Pour in seafood stock and let it simmer for 2 minutes.
  6. Stir in tomato sauce, salt, and black pepper. Reduce heat to low.
  7. Cover and simmer gently for 25 minutes, stirring occasionally.
  8. Add peas and continue cooking for another 10 minutes until peas are tender.
  9. Adjust seasoning to taste.
  10. Sprinkle with fresh parsley and serve warm.

Notes

  • Do not overcook calamari quickly — either cook briefly or let it simmer gently to keep it tender.
  • Frozen peas can be added directly without thawing.
  • A splash of lemon juice at the end can enhance freshness.
  • Serve with bread, pasta, rice, or couscous for a complete meal.
