Description
A comforting Italian seafood dish where tender calamari simmer slowly in a rich tomato sauce with peas. Rustic, flavorful, and easy to make, it’s perfect for a weeknight dinner or a special meal.
Ingredients
- 600 g cleaned calamari, sliced into rings (tentacles kept whole)
- 3 tablespoons olive oil
- 1 medium onion, finely chopped
- 3 garlic cloves, minced
- 400 g tomato sauce
- 120 ml seafood stock or water
- 150 g peas (fresh or frozen)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons fresh parsley, finely chopped
Instructions
- Heat olive oil in a wide pan over medium heat.
- Add chopped onion and cook for 5–7 minutes until soft and translucent.
- Stir in minced garlic and cook for 30 seconds until fragrant.
- Add calamari and cook for 2–3 minutes, stirring occasionally.
- Pour in seafood stock and let it simmer for 2 minutes.
- Stir in tomato sauce, salt, and black pepper. Reduce heat to low.
- Cover and simmer gently for 25 minutes, stirring occasionally.
- Add peas and continue cooking for another 10 minutes until peas are tender.
- Adjust seasoning to taste.
- Sprinkle with fresh parsley and serve warm.
Notes
- Do not overcook calamari quickly — either cook briefly or let it simmer gently to keep it tender.
- Frozen peas can be added directly without thawing.
- A splash of lemon juice at the end can enhance freshness.
- Serve with bread, pasta, rice, or couscous for a complete meal.
