Ingredients
- 2 tbsp olive oil
- Salt & pepper, to taste
- 3 medium sweet potatoes, peeled and cubed
- 2 cups cooked, shredded chicken
- ½ cup buffalo sauce (adjust to heat preference)
- ¼ cup ranch dressing or blue cheese dressing
- ½ cup cream cheese, softened
- 1 cup shredded mozzarella cheese
- ½ cup shredded cheddar cheese
- 2 green onions, chopped (plus more for garnish)
Instructions
- Preheat oven to 400°F (200°C) and grease a 9×13-inch baking dish.
- Toss cubed sweet potatoes with olive oil, salt, and pepper. Roast for 20–25 minutes until tender and caramelized.
- In a large bowl, mix shredded chicken, buffalo sauce, ranch or blue cheese dressing, cream cheese, and half of the mozzarella and cheddar cheese. Stir in green onions.
- Spread buffalo chicken mixture over roasted sweet potatoes in the baking dish.
- Top with remaining shredded cheese and bake for 15–20 minutes until hot and bubbly.
- Garnish with additional green onions and a drizzle of ranch or buffalo sauce before serving warm.
