Description

These Brown Sugar Oatmeal Bars are soft, sweet, and made with just a handful of pantry staples. Perfect for a quick breakfast, snack, or even dessert, they come together in under 15 minutes and are ideal for meal prep or on-the-go eating.

Ingredients

1 cup packed brown sugar

2 cups quick/instant oats

1 teaspoon vanilla extract

½ cup melted butter

Optional: pinch of salt

Instructions

  1. Preheat the oven to 375°F (190°C) and line an 8-inch or 9×13 baking dish with parchment paper.
  2. In a large bowl, mix together brown sugar, oats, vanilla extract, melted butter, and a pinch of salt if using.
  3. Press the mixture firmly and evenly into the prepared pan.
  4. Bake for 10 minutes, or until golden and bubbling.
  5. Let the bars cool in the pan for 5 minutes, then transfer to a cutting board and cut into bars while still warm.
  6. Allow to cool completely before storing in an airtight container.

Notes

  • Use rolled oats instead of quick oats for a chewier texture.
  • Sprinkle sea salt on top before baking for contrast.
  • Drizzle with caramel or butterscotch glaze after cooling for extra richness.
  • Mix in nuts, dried fruit, or mini chocolate chips for variety.
  • Let bars cool fully before cutting to help them hold shape better.
