Ingredients
1 cup packed brown sugar
2 cups quick/instant oats
1 teaspoon vanilla extract
½ cup melted butter
Optional: pinch of salt
Instructions
- Preheat the oven to 375°F (190°C) and line an 8-inch or 9×13 baking dish with parchment paper.
- In a large bowl, mix together brown sugar, oats, vanilla extract, melted butter, and a pinch of salt if using.
- Press the mixture firmly and evenly into the prepared pan.
- Bake for 10 minutes, or until golden and bubbling.
- Let the bars cool in the pan for 5 minutes, then transfer to a cutting board and cut into bars while still warm.
- Allow to cool completely before storing in an airtight container.
Notes
- Use rolled oats instead of quick oats for a chewier texture.
- Sprinkle sea salt on top before baking for contrast.
- Drizzle with caramel or butterscotch glaze after cooling for extra richness.
- Mix in nuts, dried fruit, or mini chocolate chips for variety.
- Let bars cool fully before cutting to help them hold shape better.
