- 400 g ripe bananas, mashed (about 3 large bananas)
- 99 g dark brown sugar
- 2 large eggs
- 1 tablespoon vanilla extract
- 180 g all-purpose flour
- 1 1/2 teaspoons baking soda
- 1/2 teaspoon salt
- 95 g black sesame seeds, lightly toasted
Instructions
- Preheat the oven to 350°F (175°C) and line a loaf pan with parchment paper or lightly grease it.
- Place the butter in a skillet over medium heat and melt it, stirring occasionally.
- Continue cooking until the butter foams and develops golden brown specks with a nutty aroma.
- Pour the browned butter into a bowl with the brown sugar and whisk until combined. Let cool for 5–10 minutes.
- Mash the bananas in a separate bowl until smooth.
- Whisk the eggs and vanilla extract into the cooled butter mixture.
- Add the mashed bananas and mix until combined.
- Stir in the flour, baking soda, and salt until just incorporated.
- Divide the batter evenly into two bowls.
- Toast the black sesame seeds in a dry pan for 2–3 minutes until fragrant, then grind them into a coarse texture.
- Mix the ground sesame seeds into one bowl of batter.
- Pour a layer of plain batter into the prepared pan, followed by sesame batter. Continue alternating layers.
- Use a knife or skewer to gently swirl the batters to create a marbled pattern.
- Bake for 50–60 minutes until the top is golden and a toothpick inserted in the center comes out clean.
- Cool in the pan for 15 minutes, then transfer to a rack to cool completely before slicing.
Notes
