Description

Ingredients

  • 1 (20 ounce) package pre-shredded hash brown-style potatoes
  • 2 large eggs, lightly beaten
  • 4 tablespoons all-purpose flour
  • 1 small sweet onion, coarsely grated
  • 2 thick slices halal smoked beef or turkey deli slices, finely chopped (about 1 cup)
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil or melted butter, for greasing

Instructions

  1. Preheat the oven to 375°F (190°C). Grease a standard 12-cup muffin tin with olive oil or melted butter.
  2. Place the shredded hash brown potatoes in a large bowl. If they contain excess moisture, squeeze them gently using a clean kitchen towel.
  3. Add the beaten eggs, flour, grated onion, chopped halal deli meat, mozzarella cheese, Parmesan cheese, salt, and black pepper. Mix until well combined.
  4. Divide the mixture evenly among the muffin cups, pressing lightly so the mixture holds together.
  5. Bake for 30 to 35 minutes, or until the tops are golden brown and the centers are fully set.
  6. Remove from the oven and let them cool in the pan for about 5 minutes before carefully removing. Serve warm.
