Ingredients
1/2 Roma tomato, diced
1/8 avocado, sliced or diced
1 Tbsp chopped onion
1 large egg
1 tsp milk
1/8 tsp Southwest seasoning
1/2 tsp olive oil
1 whole wheat tortilla
1 Tbsp chopped fresh cilantro
1/2 to 1 Tbsp shredded cheddar cheese
1 to 2 tsp salsa
Instructions
- Dice the tomato and avocado. Set aside.
- Beat the egg with milk and Southwest seasoning in a small bowl.
- Heat olive oil in a skillet over medium heat. Sauté onion until tender.
- Pour in the egg mixture and stir until just set.
- Spoon the eggs onto the tortilla and top with tomato, avocado, cheese, salsa, and cilantro.
- Fold the edges of the tortilla to form a wrap. Serve warm.
Notes
- Add black beans or sautéed bell peppers for more flavor and fiber.
- Use pepper jack cheese for a spicier version.
- Add cooked turkey sausage or bacon for a heartier meal.
