These Boston Cream Pie Cookie Bites are bite-sized treats featuring soft vanilla cookie cups, creamy vanilla pudding filling, and a glossy chocolate ganache topping—perfect for parties and easy to make ahead.


Ingredients

  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 (3.4 oz) box instant vanilla pudding mix
  • 1 1/2 cups cold milk
  • 1/2 cup whipped topping (or sweetened whipped cream)
  • 1/2 cup semi-sweet chocolate chips
  • 1/3 cup heavy cream

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 24-cavity mini muffin pan well.
  2. Cream together the softened butter and sugar until light and fluffy, about 2 minutes.
  3. Beat in the egg and vanilla extract until well combined.
  4. In a separate bowl, whisk together flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture and mix until a soft dough forms.
  6. Scoop about 1 tablespoon of dough into each muffin cavity, filling halfway.
  7. Bake for 10–12 minutes until edges are lightly golden and centers are set.
  8. Immediately press the centers down to form cups using a spoon handle or tart tamper. Let cool in the pan for 10 minutes, then remove and cool completely.
  9. To make the filling, whisk instant pudding mix with cold milk until smooth. Let thicken for 5 minutes.
  10. Fold in the whipped topping until the filling is smooth. Spoon or pipe into cooled cookie cups.
  11. For the topping, place chocolate chips in a bowl. Heat cream until hot, pour over chips, let sit 1 minute, then stir until smooth.
  12. Spoon a small amount of ganache over each cookie bite.
  13. Chill for 20–30 minutes to set before serving.
