Ingredients
- Special Sauce:
- 1/2 cup mayonnaise
- 2 tablespoons dill pickles, finely chopped
- 1 tablespoon yellow mustard
- 1 teaspoon white vinegar
- 1 teaspoon paprika
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- Beef Filling:
- 1 pound lean ground beef (85/15 recommended)
- 1/2 cup yellow onion, finely chopped
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Assembly:
- 4 large flour tortillas (10-inch)
- 1 cup iceberg lettuce, finely shredded
- 1 cup sharp cheddar cheese, freshly shredded
- 1/4 cup dill pickle slices, patted dry
Instructions
- In a bowl, combine mayonnaise, chopped pickles, mustard, vinegar, paprika, garlic powder, and onion powder. Stir until smooth and refrigerate.
- Heat olive oil in a skillet over medium heat. Sauté chopped onion for 3–4 minutes until soft.
- Add ground beef and cook 8–10 minutes until browned. Season with salt and pepper. Drain excess grease.
- Warm tortillas briefly in microwave or dry skillet.
- Spread 2 tablespoons special sauce down center of each tortilla.
- Add cooked beef, shredded lettuce, cheddar cheese, and pickle slices.
- Fold in sides, roll tightly burrito-style, and slice diagonally if desired.
- Serve immediately while warm.
