Ingredients

  • 1 cup unsalted butter, softened
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 ¼ cups all-purpose flour
  • ¾ cup very finely chopped pecans

  • 1 cup powdered sugar (for rolling)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, beat butter, powdered sugar, and vanilla until creamy and smooth.
  3. Stir in flour, chopped pecans, and salt until the dough is fully combined.
  4. Roll dough into walnut-sized balls and place 2 inches apart on ungreased baking sheets.

  6. Let cookies cool slightly on baking sheet, then transfer to a wire rack.
  7. While still warm, roll cookies in powdered sugar. Cool completely.
  8. Once fully cooled, roll in powdered sugar again for a snowy finish.
