- Kebabs:
- 1.5 lb ground beef (90% lean)
- 1 small onion, grated or finely chopped
- 3 garlic cloves, minced
- 1/4 cup fresh parsley, finely chopped
- 1 1/2 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp ground allspice or cinnamon
- 1 tsp salt
- 1/2 tsp black pepper
- Olive oil, for brushing grill
- Flatbread, sliced cucumber, tomato, and onion (optional, for serving)
- Tzatziki Sauce:
- 1 cup plain reduced-fat Greek yogurt
- 1/2 cup grated cucumber, squeezed dry
- 1 garlic clove, minced
- 1 tbsp lemon juice
- 1 tbsp fresh mint or dill, chopped
- 1/4 tsp kosher salt
Instructions
- In a mini food processor or by hand, finely chop onion, garlic, and parsley.
- Combine mixture with ground beef, cumin, coriander, allspice, salt, and pepper. Mix just until combined.
- Divide into 10–12 portions and mold onto soaked wooden skewers into oval shapes. Chill if needed to firm up.
- Heat grill or grill pan over medium-high. Brush lightly with olive oil.
- Grill kebabs for about 10 minutes, turning occasionally, until browned and cooked through.
- Meanwhile, mix all tzatziki ingredients in a bowl and chill until serving.
- Serve kebabs with tzatziki, flatbread, and fresh vegetables.

- Use ground lamb or a beef-lamb mix for deeper flavor.
- Ground turkey or chicken can substitute for a leaner version—avoid using all breast meat.
