Description

Bananas Foster Cobbler combines the caramelized richness of classic Bananas Foster with the comfort of a golden, tender cobbler topping. A warm and indulgent dessert, perfect for sharing and best served with a scoop of ice cream.


Ingredients

  • Bananas Foster Filling:
  • 56 ripe bananas, sliced into thick rounds
  • ½ cup (1 stick) unsalted butter
  • 1 cup packed light brown sugar
  • ¼ cup heavy cream
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg (optional)
  • 23 tablespoons dark or spiced rum or 1 teaspoon rum extract
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Cobbler Topping:
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • ¾ cup milk
  • ½ cup (1 stick) melted butter
  • Optional: 1 teaspoon cinnamon (in batter or sprinkled on top)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. In a large skillet, melt the butter over medium heat. Stir in brown sugar, cinnamon, nutmeg, and salt. Cook for 2–3 minutes until bubbly.
  3. Add heavy cream and vanilla extract, then stir in the rum or rum extract. Cook for 1 more minute.
  4. Fold in the banana slices gently to coat in sauce. Do not overcook.
  5. Transfer banana mixture to prepared baking dish and spread evenly.
  6. In a bowl, whisk together flour, granulated sugar, baking powder, and salt. Stir in milk until smooth, then mix in melted butter.
  7. Pour the batter evenly over the bananas without stirring.
  8. Bake for 35–40 minutes until the topping is golden and filling is bubbling.
  9. Let cool slightly and serve warm with ice cream or whipped cream.

Notes

  • Use bananas that are ripe but still firm to avoid mushiness.
  • For a non-alcoholic version, use rum extract or omit completely.
  • Add chopped pecans or walnuts to the topping for crunch.
