Description

Ingredients

  • For the crust:
  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • For the filling:
  • 3 ripe bananas, mashed
  • 3 tablespoons lemon juice
  • 32 oz (4 packages) cream cheese, softened
  • 1 1/2 cups granulated sugar
  • 4 large eggs
  • 1 cup sour cream
  • 1 teaspoon vanilla extract
  • 1/4 cup all-purpose flour
  • 1 1/2 cups fresh strawberries, chopped
  • Optional topping:
  • 1/2 cup sliced strawberries
  • 1/4 cup whipped cream

Instructions

  1. Preheat oven to 325°F (160°C). Grease a 9-inch springform pan and line the bottom with parchment paper.
  2. Mix graham cracker crumbs and melted butter until combined. Press firmly into the bottom of the pan. Bake 8–10 minutes and cool slightly.
  3. Mash bananas until smooth and stir in lemon juice. Set aside.
  4. Beat cream cheese and sugar until smooth and creamy.
  5. Add eggs one at a time, mixing on low speed just until incorporated.
  6. Blend in sour cream, vanilla extract, and flour until smooth.
  7. Fold in the banana mixture, then gently fold in chopped strawberries.
  8. Pour filling over cooled crust and smooth the top.
  9. Bake 60–70 minutes until edges are set and center is slightly jiggly.
  10. Turn off oven, crack door open, and cool cheesecake inside for 1 hour.
  11. Refrigerate at least 4 hours or overnight until fully set.
  12. Top with sliced strawberries and whipped cream before serving.
