Description

Wholesome and soft Banana Oat Muffins made with ripe bananas and hearty oats. These muffins are naturally moist, lightly sweetened, and perfect for breakfast or snacking.


Ingredients

  • 1½ cups all-purpose flour
  • 1 cup quick-cooking oats
  • ½ cup white sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 egg, lightly beaten
  • ¾ cup milk
  • ⅓ cup vegetable oil
  • 1 cup mashed ripe bananas (about 2 to 3 bananas)

Instructions

  1. Preheat oven to 400°F (200°C). Grease a 12-cup muffin tin or line with paper liners.
  2. In a large bowl, mix together flour, oats, sugar, baking powder, baking soda, and salt.
  3. In another bowl, whisk together egg, milk, oil, and mashed bananas until well combined.
  4. Add the wet ingredients to the dry ingredients and stir just until moistened. Do not overmix.
  5. Divide the batter evenly into the prepared muffin cups, filling each about two-thirds full.
  6. Bake for 18 to 20 minutes, or until a toothpick inserted into the center comes out clean.
  7. Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

  • Add ½ cup chopped walnuts or pecans for crunch.
  • Top with oats or cinnamon sugar before baking for extra texture and flavor.
  • Swap part of the flour with whole wheat for a heartier texture.
