Description

These balsamic soy roasted garlic mushrooms are savory, tender, and packed with umami. Roasted to perfection with a garlicky, tangy glaze, they’re perfect as a side dish or addition to bowls and wraps.


Ingredients

  • 2 pounds mushrooms (shiitake, cremini, or button), cleaned and halved if large
  • 1 tablespoon olive oil
  • 3 tablespoons balsamic vinegar
  • 2 tablespoons soy sauce or tamari
  • 6 cloves garlic, peeled and lightly crushed
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt, adjusted to taste
  • 1 tablespoon chopped fresh parsley for garnish (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Place the mushrooms in a large bowl.
  3. Add olive oil, balsamic vinegar, soy sauce, crushed garlic, black pepper, and salt.
  4. Toss until mushrooms are evenly coated.
  5. Spread in a single layer on a baking sheet, ensuring garlic is distributed.
  6. Roast for 25–30 minutes, stirring once halfway through, until tender and browned.
  7. Remove from oven and garnish with parsley if desired. Serve warm.
