Description

This baked potato chicken and broccoli casserole is a hearty, comforting meal combining creamy mashed potatoes, seasoned chicken, broccoli, and melted cheese in one delicious bake. Perfect for family dinners or gatherings.


Ingredients

  • 3 pounds red potatoes, cut into 1-inch pieces
  • 4 tablespoons unsalted butter, softened
  • 1 cup sour cream
  • 1/2 cup whole milk
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 2 cups cooked chicken breast, diced or shredded
  • 1 1/2 cups broccoli florets, lightly steamed and chopped
  • 1 cup smoked turkey strips, finely chopped
  • 2 cups shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 2 tablespoons chopped green onions (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish and set aside.
  2. Place the potatoes in a large pot and cover with cold water. Bring to a boil, then simmer for 15–18 minutes, or until fork-tender. Drain well.
  3. Mash the hot potatoes with butter, sour cream, milk, salt, pepper, and garlic powder until smooth and creamy.
  4. Fold in the cooked chicken, broccoli, smoked turkey, and half of the cheddar cheese. Mix gently to combine.
  5. Spread the mixture evenly into the prepared baking dish.
  6. Sprinkle the remaining cheddar and all the mozzarella cheese over the top.
  7. Bake uncovered for 25–30 minutes, or until heated through and cheese is melted and golden.
  8. Let rest for 5 minutes before serving. Garnish with chopped green onions if desired.
