This baked potato chicken and broccoli casserole is a hearty, comforting meal combining creamy mashed potatoes, seasoned chicken, broccoli, and melted cheese in one delicious bake. Perfect for family dinners or gatherings.
Ingredients
- 3 pounds red potatoes, cut into 1-inch pieces
- 4 tablespoons unsalted butter, softened
- 1 cup sour cream
- 1/2 cup whole milk
- 1 1/2 teaspoons salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 2 cups cooked chicken breast, diced or shredded
- 1 1/2 cups broccoli florets, lightly steamed and chopped
- 1 cup smoked turkey strips, finely chopped
- 2 cups shredded cheddar cheese
- 1/2 cup shredded mozzarella cheese
- 2 tablespoons chopped green onions (optional)
Instructions
- Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish and set aside.
- Place the potatoes in a large pot and cover with cold water. Bring to a boil, then simmer for 15–18 minutes, or until fork-tender. Drain well.
- Mash the hot potatoes with butter, sour cream, milk, salt, pepper, and garlic powder until smooth and creamy.
- Fold in the cooked chicken, broccoli, smoked turkey, and half of the cheddar cheese. Mix gently to combine.
- Spread the mixture evenly into the prepared baking dish.
- Sprinkle the remaining cheddar and all the mozzarella cheese over the top.
- Bake uncovered for 25–30 minutes, or until heated through and cheese is melted and golden.
- Let rest for 5 minutes before serving. Garnish with chopped green onions if desired.
