Ingredients
- 4 tbsp butter, divided
- 4 cloves garlic, smashed
- 2 tbsp lemon juice
- 1/4 tsp onion powder
- 4 (8-oz) skin-on, bone-in chicken thighs
- Salt and ground black pepper, to taste
- 2 tbsp fresh parsley, chopped
Instructions
- Preheat oven to 375°F (190°C).
- Melt 3 tbsp butter in a microwave-safe bowl. Stir in smashed garlic, lemon juice, and onion powder. Set aside.
- Season chicken thighs with salt and pepper on both sides.
- Heat remaining 1 tbsp butter in an oven-safe skillet over medium-high heat. Brown chicken skin-side down for 3–4 minutes.
- Flip chicken, brush with lemon-butter mixture, and pour remaining mixture into the skillet. Remove from heat.
- Bake for about 30 minutes, basting every 10 minutes with pan juices, until chicken reaches 165°F (74°C).
- Transfer to a platter, drizzle with pan juices, and garnish with parsley. Serve hot.

- Use boneless, skinless chicken thighs (reduce bake time to ~20 minutes).
