Ingredients
- 4 white fish fillets (such as cod, tilapia, or halibut), about 150–180 g each
- 3 tablespoons olive oil
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon ground coriander
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- juice of 1 lemon
- zest of 1 lemon
- 1 medium tomato, finely chopped
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon fresh cilantro, chopped
- 1/2 teaspoon red pepper flakes (optional)
Instructions
- Preheat oven to 200°C (400°F) and lightly grease a baking dish.
- Pat fish fillets dry and place them in a single layer in the dish.
- Mix olive oil, garlic, cumin, paprika, coriander, salt, pepper, lemon juice, and zest.
- Pour the mixture evenly over the fish.
- Top with chopped tomato, parsley, cilantro, and red pepper flakes if using.
- Bake for 15–20 minutes until fish flakes easily with a fork.
- Let rest briefly before serving.
