Ingredients

  • 4 white fish fillets (such as cod, tilapia, or halibut), about 150–180 g each
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • juice of 1 lemon
  • zest of 1 lemon
  • 1 medium tomato, finely chopped
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh cilantro, chopped
  • 1/2 teaspoon red pepper flakes (optional)

Instructions

  1. Preheat oven to 200°C (400°F) and lightly grease a baking dish.
  2. Pat fish fillets dry and place them in a single layer in the dish.
  3. Mix olive oil, garlic, cumin, paprika, coriander, salt, pepper, lemon juice, and zest.
  4. Pour the mixture evenly over the fish.
  5. Top with chopped tomato, parsley, cilantro, and red pepper flakes if using.
  6. Bake for 15–20 minutes until fish flakes easily with a fork.
  7. Let rest briefly before serving.
