Description

Baked cheesy beef roll-ups are a hearty, family-friendly meal featuring seasoned ground beef, melty cheese, and soft tortillas baked until golden. Perfect for weeknight dinners or casual gatherings.

Ingredients

  • 500 g ground beef (halal)
  • 1 tablespoon olive oil
  • 1 medium onion, finely chopped (150 g)
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1 teaspoon ground paprika
  • 1 teaspoon ground cumin
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried oregano
  • 120 ml tomato sauce
  • 120 g shredded mozzarella cheese
  • 120 g shredded cheddar cheese
  • 6 large flour tortillas (about 25 cm each)
  • 2 tablespoons chopped fresh parsley (optional, for garnish)

Instructions

  1. Preheat the oven to 190°C (375°F).
  2. Heat olive oil in a large skillet over medium heat. Add chopped onion and cook for 3–4 minutes until soft.
  3. Add garlic and cook for 30 seconds until fragrant.
  4. Add ground beef and cook for 6–8 minutes, breaking it up, until browned.
  5. Stir in salt, paprika, cumin, black pepper, and oregano. Mix well.
  6. Pour in tomato sauce and simmer for 3 minutes. Remove from heat.
  7. Lay tortillas flat and divide the beef mixture evenly among them.
  8. Sprinkle mozzarella and cheddar over the beef.
  9. Roll each tortilla tightly and place seam-side down in a greased baking dish.
  10. Bake uncovered for 18–22 minutes, until golden and cheese is melted.
  11. Garnish with parsley, let rest 5 minutes, and serve warm.

Notes

  • Add diced bell peppers or mushrooms to the filling for extra veggies.
  • Use all mozzarella for a milder flavor or cheddar for sharper taste.
  • Add chili flakes or chili powder for extra heat.
  • Swap in whole wheat or gluten-free tortillas if desired.
