- Chocolate Ganache:
- 1 1/2 cups semi-sweet chocolate chips
- 5 tablespoons Baileys Irish Cream
- 5 tablespoons heavy whipping cream
- Whipped Cream Topping:
- 1 cup heavy whipping cream
- 2 tablespoons Baileys Irish Cream
- 1/3 cup powdered sugar
Instructions
- Preheat oven to 350°F (175°C). Grease a 9-inch springform pan.
- Prepare cake batter according to package instructions. Pour half the batter into the pan.
- Bake 30–35 minutes until a toothpick comes out clean. Remove and reduce oven to 300°F (150°C).
- Beat cream cheese, sugar, and flour until smooth.
- Add sour cream and mix well.
- Mix in Baileys and vanilla extract.
- Add eggs one at a time, mixing just until combined.
- Pour cheesecake batter over baked cake layer.
- Bake at 300°F for 1 hour.
- Turn off oven and let cake sit inside 30 minutes. Crack door and cool another 30 minutes.
- Refrigerate overnight to set.
- For ganache, melt chocolate chips, heavy cream, and Baileys in a double boiler, stirring until smooth.
- Pour ganache over chilled cake and spread evenly. Refrigerate at least 2 hours.
- Beat whipping cream, powdered sugar, and Baileys until stiff peaks form.
- Pipe whipped cream around edges. Slice with a hot knife for clean cuts.
