Ingredients
- 1 ½ cups (180 g) all-purpose flour
- 1 cup (90 g) rolled oats
- 2 teaspoons baking powder
- ½ teaspoon baking soda
- 1 teaspoon ground cinnamon
- ¼ teaspoon fine salt
- 1 cup (240 g) unsweetened applesauce
- ½ cup (120 g) plain Greek yogurt
- ⅓ cup (110 g) honey
- ¼ cup (60 ml) neutral vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 180°C (350°F). Line a 12-cup muffin tin with paper liners or lightly grease it.
- In a large bowl, whisk together flour, oats, baking powder, baking soda, cinnamon, and salt.
- In another bowl, combine applesauce, Greek yogurt, honey, oil, eggs, and vanilla. Mix until smooth.
- Pour the wet ingredients into the dry and stir until just combined. Do not overmix.
- Divide the batter evenly among the muffin cups, filling each about ¾ full.
- Bake for 18–22 minutes, or until a toothpick inserted into the center comes out clean.
- Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
Notes
- Do not overmix the batter to keep muffins tender.
- Add-ins like chopped apples, nuts, or raisins can be folded into the batter.
