Description

These apple sauce muffins are soft, wholesome, and gently sweet, made with Greek yogurt and oats for added protein and texture. Perfect for breakfast or snacks, they’re quick to prepare and easy to customize.


Ingredients

  • 1 ½ cups (180 g) all-purpose flour
  • 1 cup (90 g) rolled oats
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon fine salt
  • 1 cup (240 g) unsweetened applesauce
  • ½ cup (120 g) plain Greek yogurt
  • ⅓ cup (110 g) honey
  • ¼ cup (60 ml) neutral vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 180°C (350°F). Line a 12-cup muffin tin with paper liners or lightly grease it.
  2. In a large bowl, whisk together flour, oats, baking powder, baking soda, cinnamon, and salt.
  3. In another bowl, combine applesauce, Greek yogurt, honey, oil, eggs, and vanilla. Mix until smooth.
  4. Pour the wet ingredients into the dry and stir until just combined. Do not overmix.
  5. Divide the batter evenly among the muffin cups, filling each about ¾ full.
  6. Bake for 18–22 minutes, or until a toothpick inserted into the center comes out clean.
  7. Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
