Ingredients
- 1 cup cottage cheese
- 1 cup rolled oats
- 1 cup diced apples (about 1 medium apple)
- 1/2 cup vanilla or unflavored protein powder
- 1/4 cup pure maple syrup
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 2 large eggs
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 350°F (175°C). Line or grease a 12-cup muffin tin.
- In a large bowl, mix cottage cheese, eggs, maple syrup, and vanilla extract until smooth. Blend cottage cheese first if a smoother texture is preferred.
- In a separate bowl, combine oats, protein powder, cinnamon, nutmeg, baking powder, and salt.
- Fold dry ingredients into wet ingredients until just combined.
- Gently fold in diced apples.
- Divide batter evenly among muffin cups, filling about two-thirds full.
- Bake for 18–20 minutes, or until a toothpick inserted in the center comes out clean.
- Cool in pan for 5 minutes, then transfer to a wire rack to cool completely.
