Description

This apple harvest roasted chicken is a cozy, fall-inspired dish made with a whole chicken stuffed with apples and onions, rubbed with ghee and warm spices, and roasted over apple cider for tender, flavorful meat and a deliciously aromatic kitchen.


Ingredients

  • 1 whole chicken (about 45 pounds)
  • 1 tablespoon ghee (or unsalted butter)
  • 1½ teaspoons kosher salt
  • 1 teaspoon ground black pepper
  • ½ teaspoon ground cinnamon
  • 1 large Honeycrisp apple, sliced into wedges
  • 1 large white onion, peeled and quartered
  • 1½ cups apple cider

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Pat the chicken dry with paper towels to help the skin crisp.
  3. Stuff the cavity of the chicken with alternating apple wedges and onion quarters.
  4. Rub the ghee all over the outside of the chicken, including into the crevices.
  5. Sprinkle the salt, pepper, and cinnamon evenly over the chicken and press gently to help it stick.
  6. Place the chicken breast-side up on a roasting rack inside a roasting pan, or directly in the pan if no rack is available.
  7. Pour the apple cider into the bottom of the pan, avoiding contact with the chicken.
  8. Loosely cover the chicken with foil to retain moisture.
  9. Roast for 45 minutes, then remove the foil and roast an additional 20–30 minutes, or until internal temperature reaches 165°F (74°C) in the thickest part of the thigh.
  10. Remove from the oven and let rest for 10–15 minutes before carving.

Notes

  • Add fresh rosemary or thyme to the cavity for extra flavor.
  • Roast uncovered for the last 15 minutes for crispier skin.
  • Use spiced cider for more depth of flavor.
  • Roast root vegetables like carrots or parsnips in the pan for a complete meal.
  • Use bone-in chicken thighs to cut down cooking time to about 40–45 minutes.
