Ingredients
- 1 cup all-purpose flour
- 1 cup yellow cornmeal
- 2 teaspoons baking powder

- 3/4 cup granulated sugar

Instructions
- Preheat the oven to 400°F (200°C) and place a 10-inch cast-iron skillet in the oven to heat.
- In a large bowl whisk together the flour, cornmeal, baking powder, baking soda, salt, and cinnamon.
- In another bowl whisk the eggs until smooth, then add the granulated sugar and mix well.
- Whisk in the melted butter until incorporated.
- Add the buttermilk and whisk until the mixture becomes smooth.
- Pour the wet ingredients into the dry ingredients and mix gently until just combined.
- Fold the diced apples into the batter.
- Carefully remove the hot skillet from the oven and grease it with 1 tablespoon of butter.
- Pour the batter into the hot skillet and spread it evenly.
- Bake for 25–30 minutes until golden brown and a toothpick inserted in the center comes out clean.
- Remove from the oven and allow the cake to cool for about 5 minutes.
- Turn the cake out onto a wire rack, slice, and serve.
