These 3-ingredient peanut butter bliss balls are a naturally sweet, no-bake snack made with Medjool dates, raw peanuts, and shredded coconut. Soft, satisfying, and quick to prepare, they’re perfect for healthy snacking or meal prep.
Ingredients
- 1 cup Medjool dates, pitted
- 3/4 cup raw peanuts
- 1/4 cup shredded coconut
- Pinch of salt
- 1/4 cup shredded coconut, extra for rolling
Instructions
- Remove the pits from the Medjool dates.
- Add pitted dates, raw peanuts, shredded coconut, and a pinch of salt to a food processor.
- Process for about 5 minutes until the mixture is sticky and finely chopped. It should hold together when pressed.
- Scoop tablespoon-sized portions, squeeze tightly, and roll into balls.
- Roll each ball in the extra shredded coconut, then roll again in your hands to help the coating stick.
- Refrigerate for 30 minutes before serving to firm up.
Notes
- Use soaked dried dates if Medjool dates are unavailable—soak in warm water for 10 minutes and drain well.
- Roasted peanuts can be used for a deeper flavor; choose unsalted.
- Skip the shredded coconut coating if preferred.
