Description

These 3-ingredient peanut butter bliss balls are a naturally sweet, no-bake snack made with Medjool dates, raw peanuts, and shredded coconut. Soft, satisfying, and quick to prepare, they’re perfect for healthy snacking or meal prep.


Ingredients

  • 1 cup Medjool dates, pitted
  • 3/4 cup raw peanuts
  • 1/4 cup shredded coconut
  • Pinch of salt
  • 1/4 cup shredded coconut, extra for rolling

Instructions

  1. Remove the pits from the Medjool dates.
  2. Add pitted dates, raw peanuts, shredded coconut, and a pinch of salt to a food processor.
  3. Process for about 5 minutes until the mixture is sticky and finely chopped. It should hold together when pressed.
  4. Scoop tablespoon-sized portions, squeeze tightly, and roll into balls.
  5. Roll each ball in the extra shredded coconut, then roll again in your hands to help the coating stick.
  6. Refrigerate for 30 minutes before serving to firm up.

Notes

  • Use soaked dried dates if Medjool dates are unavailable—soak in warm water for 10 minutes and drain well.
  • Roasted peanuts can be used for a deeper flavor; choose unsalted.
  • Skip the shredded coconut coating if preferred.
