Description

A quick and flavorful skillet dish featuring juicy chicken breasts in a light, savory mushroom sauce made without cream—perfect for busy weeknights.


Ingredients

  • 1 1/2 lb (700 g) boneless skinless chicken breasts
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • 1 teaspoon ground coriander
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon ghee or unsalted butter
  • 1 tablespoon extra virgin olive oil (for sauce)
  • 12 oz (340 g) fresh mushrooms, sliced
  • 1/2 cup chicken broth
  • 3 green onions, chopped
  • 2 garlic cloves, minced
  • 1/4 teaspoon kosher salt, or to taste
  • 1/4 teaspoon black pepper, or to taste
  • 2 tablespoons chopped fresh parsley (for garnish)

Instructions

  1. Preheat oven to 200°F (95°C) to keep chicken warm after searing.
  2. Slice chicken breasts horizontally into thin cutlets. Pat dry and season with salt and pepper. Combine oregano, paprika, and coriander and sprinkle evenly on both sides.
  3. Heat 2 tablespoons olive oil in a skillet over medium-high heat. Cook chicken cutlets for 3–4 minutes per side until golden and cooked through. Transfer to oven-safe plate and keep warm.
  4. In the same skillet, add butter and 1 tablespoon olive oil. Add mushrooms and cook 5 minutes until softened and browned.
  5. Add chicken broth, green onions, garlic, salt, and pepper. Stir and simmer for 2–3 minutes to slightly thicken.
  6. Return chicken to skillet and nestle into sauce. Spoon sauce over chicken, remove from heat, and garnish with parsley.
