These 2 Ingredient Choc-Caramel Medallions are naturally sweet, no-bake treats made with Medjool dates and dark chocolate. Each bite offers a chewy, caramel-like center topped with smooth chocolate — quick to make and perfect for guilt-free snacking.
Ingredients
- 12 large Medjool dates, pitted
- 120 g dark chocolate (70% cocoa or higher), chopped
Instructions
- Line a tray or plate with baking paper.
- Slice each date lengthwise and open slightly.
- Place cut-side down on the tray and flatten with your palm or a glass into medallion shapes.
- Melt the chocolate in a heatproof bowl over simmering water or in the microwave in 20-second bursts, stirring until smooth.
- Spoon about 1 tablespoon of melted chocolate over each date and spread evenly.
- Refrigerate for 10–15 minutes, or until the chocolate is set.
- Remove from the fridge and enjoy.
Notes
- Sprinkle sea salt on top for a sweet-salty combo.
- Add chopped nuts for crunch.
- Use milk or dairy-free chocolate as preferred.
